Easy Broccoli Bake ~ One Punky Mama

 I love broccoli. I could eat broccoli all day long. Raw, cooked, plain, with tons of butter, dipped in ranch dressing.. I uh, REALLY love broccoli. However, the tiny people in my house tend to get bored when I feed them the same things over and over again (the nerve!) so I try to mix it up a little.  Technically because of the stuffing, this easy broccoli bake is like two sides in one – but I like to refer to my boys in particular as amateur carb loaders, so… yeah.

  1. (2) 10-ounce packages frozen chopped broccoli (or the equivalent of fresh)
  2. (1) 10.75 ounce can cream of mushroom soup*
  3. 1/2 cup mayonnaise
  4. 1 egg, slightly beaten
  5. 1 small onion, grated
  6. 1 cup grated sharp cheese
  7. 4 ounces herb stuffing
  8. 1/2 cup butter, melted
  1. Cook the broccoli slightly; drain.
  2. Combine with the soup, mayo, egg, onion & cheese.
  3. Place in a casserole dish.
  4. Toss the stuffing with melted butter; spoon over the broccoli mixture.
  5. Bake in a 350 over for 30-35 minutes.
  6. Serves 6-8.
