I wasn’t in love with Chinese food until I was pregnant with my youngest child and my husband was deployed. I’m pretty sure the neighbors thought I was having some sort of affair with the delivery guy (well, also the pizza delivery guy.. and the UPS guy.. but that’s another story) because I had food delivered ALL. THE. TIME. Unfortunately, we know commercially prepared foods can have some icky stuff in them. This is a somewhat healthier version of the classic Chinese beef and broccoli, adapted for the slow cooker and lazy days.

  1. 2lb. sirloin, cut into strips*
  2. 1 can beef broth
  3. 1 cup soy sauce
  4. 2/3 cup brown sugar
  5. 2 tablespoons sesame oil
  6. 3 tsp. minced garlic
  1. 4 tbsp. cornstarch
  2. 2 bags frozen broccoli cuts
  3. Cooked white or long-grain rice
  1. In a bowl, stir together soy sauce, beef broth, brown sugar, garlic and sesame oil.
  2. Place beef strips in crock pot and pour mixture over top. Squish them around so the liquid penetrates all the meat.
  3. Turn crock pot on low and cook for 4-6 hours.
  4. When done, in a small bowl, whisk together cornstarch and about a half cup of cooking liquid removed from the crock pot. When it’s mixed well, pour it back into the crock pot and give it a quick stir. Don’t leave the lid off too long.
  5. Cook on low for an additional 30 minutes to thicken up the sauce. If you don’t let it cook, it won’t thicken. That’s how cornstarch works.
  6. I like to cook/steam my broccoli first and then toss it in at the last minute. Otherwise it turns kind of an unappetizing shade of brown.
  1. *If you’re really feeling lazy, Wegmans & other grocery stores sell sirloin strips already cut up. Just sayin.

      You’re not alone! My mom didn’t have one until she was well into her 50’s. My dad had decided a long time ago (which may have been true then) that “crock pot’s cook the heck out of food, and you don’t need one.” She LOVES hers. :)
