Chicken a la King - One Punky Mama

 This is something my mom has made pretty much my entire life. When I started dating my husband, he absolutely fell in love with my moms cooking – and this particular meal. It made me laugh because it’s SUCH an easy thing to make! There are probably fancier versions out there, but this is how my mom makes chicken a la king, so it’s good enough for me!

Ingredients
  1. 1 can sliced mushrooms (6 oz.) – liquid reserved
  2. 1/2 C. diced green pepper
  3. 1/2 C. butter
  4. 1/2 C. flour
  5. 1 t. salt
  6. 1/4 t. pepper
  7. 2 C. light cream
  8. 1 3/4 C. chicken broth
  9. 2 C. cubed cooked chicken
  10. 1 jar (4 oz.) pimento
Instructions
  1. Cook mushrooms and green pepper in butter 5 minutes.
  2. Blend in flour salt and pepper until bubbly.
  3. Remove from heat.
  4. Stir in cream, broth and reserved mushroom liquid.
  5. Heat to boiling.
  6. Stir in chicken & pimento.
  7. Serve over toast.

    This looks so easy and good. My son loves chicken and this would make him gobble it all up. There are so many ways to cook chicken that don’t have much variety and this sounds like a way to make it different!!
